Each wood looks different. I like maple but with you wanting to go with a dark stain they will all look pretty similar. Some types have more grain. Pine is the cheapest I think. You could always pick up a few scrap pieces and take them to a paint store and they can put a stain on them for free to see which you like the best.

I also like maple, pine is usually best for painting, red oak is probably the most popular stain grade, birch is also cheap. I highly recommend Houston hardwoods to check out your different types. I just got my maple from there and have stained it pretty dark. If you want to swing by you can see what it looks like, I am also Jones and West area.
You can always do the frame in pine and skin it in nicer woods.

I have lots of scrap maple if you need some to do some test stains. Birch is also a good one that can be on the cheaper side. I have scrap birch plywood if you want to try that stain too.

Spice just pm me and we can set up a time if you want. Dining room is becoming a fish room so under construction but you can get some ideas. It is mostly the stain though- I was purposefully looking for the most subtle grain I could find. Birch is cheaper but really nice in that regard, it was my second choice and I wasn't paying attention to price at all (with all the other money the price difference between the woods is small).
