Hate these guys, had to catch dozens last year and still find one from time to time, generally with a trophy wall of snail shells. A basic fish trap made out of a regular water bottle works alright. Load with shrimp, lean against a rock near their hangout so they can crawl in but not out. Only problem with this is you will catch lots of random stuff as well. Best method I found was also the most tedious, flash light and tongs at night. Red light works best and takes practice but works pretty well, just takes a while.

I just sharpened some stainless TIG wire and tried to spear it but he’s too quick. I was using a white light but I’ll try a red or green light when it comes back out.

Got a whiskey glass? Any glass container about 3" deep will work. Get a frag plug, a rubber band, and a shrimp or two from the grocery store. Position the whiskey glass in such a way that it leans against the rock near where he lives, but try to keep it as vertical as possible. Break off a solid piece of the shrimp that's about half the size of a dime, use the rubber band to attach that piece of shrimp to the frag plug, and put the frag plug in the bottom of the glass. He will climb in for the food but won't be able to climb out. Do this at night when your lights go off. Remove the shrimp piece and replace it every night so that it doesn't start decomposing and put too many nutrients back into your water. Shouldn't take more than a night or two and you will catch him. Pull the glass out with him in it and you can do what you want with him. I've caught dozens of them this way.
