I know nothing of cameras or photography but I really like my Nikon D5300 with a Tamron 90mm macro lens, an Avast Marine Porthole, and an orange filter for actinic shots, which I imagine with your shroom collection, may be the perfect setup.

Go to a camera specialty store if possible. We have one in Austin and they just about knew every model there ever was and knew the small differences between them. Why I should get the D5300 versus the D5200 or D5800... Stuff like that. They even knew about polarizing filters to remove reflections off the water surface and other fun geeky photo stuff.

Why I should get the D5300 versus the D5200 or D5800... Stuff like that. They even knew about polarizing filters to remove reflections off the water surface and other fun geeky photo stuff.

This just turned in to a long term project.. gonna have to force my butt into one of those stores one day.

I love my Nikon D7000, and some fairly exotic lenses such as the ancient 200mm medical Nikkor and a Sigma 600mm macro mirror lens that lets you take close ups from across the room. But honestly, a lot of my best coral shots were taken with an Olympus Tough TG-820 point-and-shoot camera, because it can go under water. I often have trouble getting a sharp shot through the thick glass of my tank, and with this camera I just put it in the tank and get as close as I want.

I prefer something fairly straight forward without all the fancy dials and add ons and to have it as dummy proof as possible. It sounds like the Olympus could work. Do you have trouble with getting salt creep off of the camera after you dip it in? The bottom of my bare bottom tank is also not blacked out :/ and you can see the fuge light coming through from a top down shot lol. My blues are incredibly blue as I have no other color spectrum. I'll be adding more whites and having a more balanced spectrum but will need to do it incredibly slowly as my shrooms have come so accustomed to the blues.

I've also been told some of the best shots come from holding the coral 2inch from the surface of the water?

I totally understand wanting to keep it simple. For me photography has been a hobby for a long time, and the complicated gadgets are at least half the fun, but it's not for everyone.

I just rinse the Olympus off in the sink for a few minutes after using it in the tank (or snorkeling), then dry it carefully before opening the panel where you plug it in to download the pictures to the computer. I don't know if it would handle totally blue light any better than a phone - I tend to run my tanks less blue than most people.

I have not tried holding the coral near the surface - I could see that working, but lighting it could be tricky to avoid reflections, which is where the polarizing filter Ty was talking about can help.
